Oil extracted from olives is produced by cold press processing only, which means the water temperature in the mill must not be higher than 26 degrees.
Olives bought up by Bilaja company must be picked and processed during the very same day.
The separation of oil from the paste is done in three phases. The centrifuge with 3512 spins separates the paste that comes from the mill into solid matter (komina), liquid (murga) and oil that goes to separator. The separator spins 7100 times per minute and further separates the impurities from the oil that comes from the centrifuge. Liquid matter that contains some oil can be further separated following EU standards thus using the olives most efficiently.
After each customer the entire mill is cleaned in order to make sure that the oil from one customer does not get in contact with the oil from other customers which guarantees higher oil quality and safety as well. It is also good to emphasize that the olives are rinsed in clean water two times before the grinding process.
